This Gesha is grown on our own plots at El Fenix, a rare-varietal farm & processing mill focused on organic coffee cultivation and post-harvest processing in Calarcá Quindío, Colombia.
Grown between 1680m and 1800m above sea level, the slow maturation of the coffee cherries in these high altitudes allowed flavours to develop fully, revealing a satisfying complexity.
The Water-Pillow Technique
The innovative "water-pillow" technique developed by Raw Materials plays a crucial role in both the Anoxic Washed and Natural processes. This technique involves placing a sheet over coffee cherries and submerging it under cool water to create a vacuum-sealed environment. The environment maintains a stabilised temperature of around 25°C, allowing for precise fermentation and the development of complex and distinctive flavour profiles.
The Anoxic Washed Process: Using the water-pillow technique, the cherries are fermented in this controlled environment for 48 hours at 25°C. After fermentation, the cherries are pulped, washed, and sun-dried on raised beds for two- to three weeks. This process results in a clean and refined flavour profile, highlighted by notes of Peach, Blueberry, and Strawberry.
The Anoxic Natural Process: Similarly, the cherries in the Anoxic Natural process are fermented under the water-pillow technique for 48 hours at 25°C. However, instead of being pulped and washed, the cherries are dried whole on raised beds for four- to five weeks. This extended drying of the coffee bean in its pulp develops a more intense fruity flavour, featuring notes of Pink Guava, Osmanthus Oolong, and Stone Fruits.
